Raw pu-erh aka green or sheng pu-erh tea used to be called just pu-erh. It story began about 2000 years ago. In essence, it is a green tea that is roasted 20% less than normal. Because it took many months to transport tea along the silk road, they began pressing it into cakes for compactness.
The main point of raw pu-erh is that it matures slowly, fermenting . The level of fermentation depends on the humidity and temperature of the storage environment. The younger raw pu-erh is, the sweeter, the more floral-fruity its flavor and the more astringency is in it. Brewed young sheng pu-erh tea has a golden-colored infusion. A 15-year-old naturally stored raw pu-erh tea is about 50% fermented. Such green pu-erh infuses to a dark red, burgundy liquor. The taste of a 15-year-old sheng has bright tones of dried fruit with hints of expensive wood: teak, sandalwood, etc. Over the years of storage, its tartness considerably decreases. Gradually ripening, green raw pu-erh tea approaches black ripe pu-erh in the level of fermentation, color of infusion, softness of mouthfeel, and flavor notes.
But sheng will never become shou, even a 50-year-old raw pu-erh still differs by taste from an artificially fermented tea. Read less...
