What is Black tea or Red Tea (Hong Cha)

Black tea is a type of tea that is highly oxidized. The oxidation level ranges from 50 to 90%. In some sources, they refer to it as highly fermented tea but unlike shu pu-erhs, the dark color of the leaf is caused by the reaction with oxygen, and not the effect of the yeast or microorganisms. Actual heavy fermentation does not take place here.

The producing technology of loose-leaf black tea usually fits into four stages: leaves withering, rolling, oxidation (depending on the variety and traditions of the region takes from 3 to 12 hours), and fixation — drying in a special cabinet or under the sun.
