Growing Region: Chiang Rai province, northern Thailand, 1300 -1500 meters.

Experimental Shu made of spring 2016 material from Thai 300-500 year old trees. 

Pressed manually by stone press. 

Fermented in July 2016. Tested in September 2016. 

Dry tea smells milky, walnut and conifer notes with salinity. In taste is interesting interweaving of coniferous oily tones with walnut and dairy. Since the 3-4 infusion appears sweet woodiness, almonds and chocolate. Aftertaste with pine and walnut tones, oily bitterness.
